He went off to study, but came back to investigate his own country Ecuador, and find out more about it. He is now presenting it in an enhanced format at Quitu.
He took a great interest in cuisine from an early age, and trained at Le Cordon Bleu and an international trajectory that did not prevent him from continuing to find out about his own country, and so when he returned to Ecuador he packed his bags again to embark on a trip of gastronomic and social discovery.
He finally set up Quitu, Identidad Culinaria, as a restaurant that is a bastion of Ecuador's culinary identity, with a constant focus on sustainability. Beyond Quitu as a restaurant, Identidad Culinaria is also a project on which Pérez has carried out a number of field investigations into traditional cuisine in Mexico, Peru and his native Ecuador, where he has studied the ancestral production processes of native ingredients.
