Paco Pérez represents the haute cuisine of Alt Empordà (Girona). He does so from Miramar, his flagship restaurant, which has two Michelin stars. The same goes for the Enoteca, which he runs at the Arts Hotel in Barcelona.
From the age of 12, Paco Pérez worked in the kitchen of his parents' bar, enriching his Mediterranean roots with the influences of French Nouvelle Cuisine and what would later become elBulli and Ferran Adrià.
Together with his wife, Montse Serra, he is in charge of what was once her family's inn. Under the direction of Paco Pérez in the kitchen and Montse Serra in the dining room, Miramar today represents the evolution of avant-garde cuisine, with a focus on raw materials and sustainability, without forgetting its origins and tradition.
In 2016, Paco Pérez and Montse Serra transformed the old family-run inn that was Miramar, which was born as a beach bar in 1939, into the boutique hotel that it is today. Always with the philosophy of being a restaurant with rooms, not a hotel with a restaurant, to offer guests a complete experience.
