His cuisine reflects both the east and the west of the island, which has earned him the nickname "the chef of two Sicilies" because he knows how to find points of contact between the two different regions.
Born in Agrigento, he graduated in cooking and soon went out into the world to perfect his technique. With Pietro Leemann he learnt the art of appreciating the naturalness of products, the skilful use of vegetable ingredients, the lightness of style, the transposition of the Chinese school to Mediterranean cuisine... He continued his apprenticeship with Massimiliano Alajmo until he felt the call of his homeland and returned to Sicily.
He went to Modica, to the Fattoria delle Torri, where the flavours and aromas of his childhood came back to life, he went to Nota with Corrado Assenza and Caffè Sicilia, and in 2005 he took over Gazza Ladra in Modica, where he applied everything he had learnt and won a Michelin star. The time came to start his own project and in 2014 Accursio Ristorante was born.
